Hey Everyone! It’s time to feature one of our favorite colorful vegetables of the season: Squash! Winter squashes are the ultimate, easy-care vegetable and can be absolutely delicious, versatile and healthy if you know how to use them.
We have included some helpful tips to navigating the different varieties of squash at the market and some healthy squash substitutes for your favorite cold weather comfort foods!
Squash is an excellent source of vitamins A and C. One-cup of winter squash provides about half of the daily requirement of vitamin C, and 4.5 times the daily requirement of vitamin A. Eating squash is giving your body a spa-day, only better! Here are some great ways to slide this superfood onto your kitchen table!
