 Homemade Spiced Pumpkin Butter

The perfect treat for days when the cooler weather leaves you dreaming of warm fires and wool socks!  Apples are nature made “single serving snacks,” making this warm fall inspired dessert a major hit for any gathering!


4 Honey-crisp Apples
1/2 teaspoon cinnamon
2 cups water
2 tablespoons baking soda
1 cup old-fashioned rolled oats
1/2 teaspoon salt
1/4 cup heavy whipping cream
cup dark brown sugar
cup hazelnuts – chopped & toasted

Maple Brown Butter

4 tablespoons unsalted butter
4 tablespoons maple syrup


1. Preheat oven to 400 degrees F. Spray baking dish with non-stick spray
2. Peel hazelnuts simply by bringing water and baking soda to a boil
3. Allow to boil for 3 minutes before draining & running under cold water (this should remove skins)
4. Remove stem & core from apples, leaving a hole in the center of the whole apples
5. Sprinkle inside of the apples with cinnamon, chop removed portion of apple and set aside
6. Bring water to a boil & add oats, chopped apple centers and salt
7.Reduce heat to a simmer & cook about 10-15 minutes or until oats are thick & creamy
8. Stir in heavy cream & brown sugar
9. While the oatmeal is cooking, heat the hazelnuts in a skillet over medium heat stir constantly & cook 6-8 minutes until toasted & fragrant
10. Remove let cool & coarsely chop
11. To make maple brown butter, heat butter over med heat in saucepan, whisking constantly
12. Cook until brown bits appear at bottom & bubbling occurs ( 4-5 minutes)
13. Quickly stir in maple syrup & remove from heat – continue to whisk for 30 seconds
14. Drizzle warm, maple brown butter inside of each apple, saving some for topic
15. Stuff center of apple with oatmeal & top with hazelnuts
16. Bake apples in dish for 35-40 minutes, or until apples are softened
17. Drizzle with remaining maple brown butter & serve immediately
